Pakoda Ingredients: 2 large onions, finely chopped 3-4 green chillies, chopped 2-3 tbsp. chopped, coriander leaves 1-2 tsp. grated ginger 1 tsp. red chilli powder 1 tsp. salt Asafoetida a pinch 1/2 cup gram (chick-pea flour) 1/2 cup rice flour Oil for deep frying |
Method:
Combine onion, chillies, coriander leaves, ginger, red chilli powder, salt, asafoetida, gram flour,
rice flour in a bowl and mix well. (if required add 1 tbsp. of water) Dough will be sticky.
Heat a few inches of oil in a deep fryer. Drop teaspoonful of dough into the hot oil (a few at a time)
Fry gently on both sides until crisp. Remove from the oil and drain on paper towel.
Serve hot or cold, with Chutney/Ketchup.

CHICKEN ADOBO
INGREDIENTS
DIRECTIONS
INGREDIENTS
- 1 1/2 cups water
- 1 cup distilled white vinegar
- 4 tablespoons soy sauce
- 1 teaspoon whole peppercorns
- 4 cloves garlic, crushed
- 2 tablespoons salt
- 1 (2 to 3 pound) whole chicken, cut into pieces
- 2 tablespoons vegetable oil
DIRECTIONS
- In a large pot, combine the water, vinegar, soy sauce, peppercorns, garlic and salt. Mix together, add chicken pieces and simmer over low heat (uncovered) until chicken is cooked through and tender (25 to 35 minutes).
- Remove chicken from pot and brown in oil in a large skillet over medium high heat.
- Return chicken, with oil/juices, back to pot with reserved sauce. Cover and simmer over medium heat until desired amount of sauce is yielded.

MEE GORENG (FRIED YELLOW NOODLES)
Mie goreng (Indonesian) or mi goreng (Malay; English: fried noodles) is a dish famous in Indonesia, Malaysia, and Singapore. It is made with thin yellow noodles fried with onion, fried tofu, chili, vegetables, tomatoes and egg. It is commonly available at mamak stalls in Malaysia & Singapore.
INGREDIENTS
600g of Yellow Noodles
Bean Sprout
3-4 tbsp Tomato Ketchup (any brand)
2 tbsp Oyster sauce
1 or 2 tbsp Dark Soy sauce
Sawi/Chye Sim (veggies) - cut into small pieces
2 Egg(s)
A stalk of spring onion & celery (cut into small slice)
Beancurd/tofu (fried & sliced)
Fried shallots
2 tomatoes (sliced)
Squid/prawns/fish cakes (or anyone of the seafood) or beef (cut in small pieces)
Sugar & salts
Cooking oil
Blended Ingredients
10 pcs Dried Chillies (or more if you prefered spicy)
2 Onions
3 cloves of Garlics
Dried prawns
METHOD
1. Heat the wok and pour in the cooking oil.
2. Fried the blended ingredients for 10-15 mins
3. Add in tomato ketchup, oyster sauce, dark soya sauce and stir again
4. Add sugar and salt
5. Add the seafood & tofu and stir
6. Add in bean sprout and veggies (chye sim)
7. Add the Yellow Noodles and mixed together
8. Add in the 2 eggs and mixed well
9. Lastly add in sliced tomatoes and mixed well
10. Put the Mee Goreng into a serving plate and sprinkle the fried shallots and sliced spring onion & celery. The Mee Goreng is ready to be eaten

Ingredients
- 1 loaf 15cm baguette, cut into 1/2 lengthwise
- 2 tbsp pizza sauce
- 1 slice chicken ham , roughly chopped
- 1/4 green pepper , roughly chopped
- 1 pineapple ring , roughly chopped
- 1 tomato , sliced
- Pinch of dried oregano leaves [optional]
- 50 g mozzarella cheese
Method
1. Spread each baguette half with pizza sauce
2. Top with kitchen Ham , green pepper pineapple and tomato
3. Sprinkle dried oregano leaves [optional] and mozzarella cheese
4. Grill till cheese melts . Serve hot.
Ingredients

Chocolate Layer Cake
Ingredients
1 1/2 cup (340 g) butter, softened
1 2/3 cup (340 g) sugar
6 eggs
2 2/3 cup (340 g) all-purpose flour
ca. 3/4 cup (120 g) finely ground almonds
6 tablespoons unsweetened cocoa powder
2 teaspoons baking powder
2 teaspoons vanilla extract
1/2 cup boiling water
Ingredients for frosting
6 tablespoons (80 g) butter
7 oz (200 g) sweet or semisweet chocolate (37-60% cocoa)
2 eggs (salmonella-free)
7 oz (200 g) icing sugar (confectioner's sugar)
Method
1. Preheat oven to 350 deg F (Gas mark 4 or 180 deg C).
2. Line two 9 inch (23 cm) cake tins with greaseproof or other non-stick paper and grease the tins.
3. Beat the softened butter with sugar.
4. Add one egg at a time, mix well between each egg.
5. Mix with flour, cocoa powder, baking powder, vanilla extract, and finely ground almonds.
6. Add 1/2 cup of boiling water and mix well.
7. Transfer to two seperate cake tins and bake at 350 degrees just until set in the middle, approximately 30-45 minutes. A wooden pick inserted in center should come out with just a few moist crumbs on it. Do not over-bake!
8. Cool the cakes and cut each in half, horizontally. They are easier to cut if they are kept in a refridgerator for a few hours before cutting.
Frosting
1. Melt butter and chopped chocolate in a double boiler.
2. Beat the eggs with icing sugar and mix with the chocolate and butter mixture.
3. Use two thirds of the frosting to sandwich the four layers together
and coat the cake with the remainder of the frosting.
4. Cool the cake in the fridge to harden the frosting. Place the cake at room temperature 1-2 hours before it is served.
Variations
A. You may substitute the boiling water with hot coffee or tea.
B. If you want a smaller cake, use half the amount of each ingredient and one cake tin. Make then only two layers.
C. For the frosting, you must use an egg without salmonella risk. If this is not avalaible, please use a different chocolate frosting.
The cake is approximately 3 inches (7.5 cm) tall.

PEANUT BUTTER SANDWICH
INGREDIENTS:

2. skippy/goober peanut butter

Cupcakes
Ingredients
- 100g self-raising flour
- 75g butter
- 75g Castor sugar
- 1 egg
- 1 tsp Vanilla essence
- 5 tbsp milk
Variations
~Chocolate Cupcakes: substitute 1 heaped tsp flour with 1 heaped tsp cocoa powder.
~Chocolate Rice Cupcakes: fold in 1 tbsp chocolate rice
~Mixed Fruit Cupcakes: fold in 4 tbsp mixed fruit
~Banana Cupcakes: mash 2 pisang emas, fold in after flour
~Coconut Cupcakes: fold in 2 tbsp freshly grated white coconut
~Nutty Cupcakes: fold in 2 tbsp nuts (assorted, ground)
Method
1. Sift flour into large bowl.
2. Cream butter and sugar in a separate bowl, and beat till light and fluffy.
3. Add egg a little at a time, beating well after each addition.
4. Fold in flour with a metal spoon/plastic scrapper.
5. Add in vanilla essence and milk and stir till the mixture forms a soft, dropping consistency.
6. Scoop into cakes or baking tin.
7. Bake in a preheated oven at 180℃ on the middle shelf -15 to 20 minutes for small cakes , 40 minute for large cakes.
8. Place cupcakes on cooling rack to cool after baking.
Ingredients
- 100g self-raising flour
- 75g butter
- 75g Castor sugar
- 1 egg
- 1 tsp Vanilla essence
- 5 tbsp milk
Variations
~Chocolate Cupcakes: substitute 1 heaped tsp flour with 1 heaped tsp cocoa powder.
~Chocolate Rice Cupcakes: fold in 1 tbsp chocolate rice
~Mixed Fruit Cupcakes: fold in 4 tbsp mixed fruit
~Banana Cupcakes: mash 2 pisang emas, fold in after flour
~Coconut Cupcakes: fold in 2 tbsp freshly grated white coconut
~Nutty Cupcakes: fold in 2 tbsp nuts (assorted, ground)
Method
1. Sift flour into large bowl.
2. Cream butter and sugar in a separate bowl, and beat till light and fluffy.
3. Add egg a little at a time, beating well after each addition.
4. Fold in flour with a metal spoon/plastic scrapper.
5. Add in vanilla essence and milk and stir till the mixture forms a soft, dropping consistency.
6. Scoop into cakes or baking tin.
7. Bake in a preheated oven at 180℃ on the middle shelf -15 to 20 minutes for small cakes , 40 minute for large cakes.
8. Place cupcakes on cooling rack to cool after baking.

The Soto Ayam / Mee Soto Recipe
Ingredients (Serves 2):
- 1 handful of fresh / dry yellow noodles
- 6 cups chicken broth
- 1 chicken breast, bone in
- 1 tsp salt
- 1/2 lb bean sprouts, pluck off roots and blanched
Garnish:
- 1 small shallot, sliced
- 2 stalks spring onion, chopped
- 2 stalks cilantro, chopped
Soup Ingredients:
- 4-5 slices ginger
- 1 stalk lemon grass (the white part only)
- 1 small shallot
- 1/2 tsp turmeric powder
- 5 whole cloves
- 3 cardamons
- 1 star anise
- 1/2 tsp pepper (or more if you like a very peppery tasting soup)
Cooking Method:
1. Cook yellow noodles and set aside. Deep fry sliced shallot (from Garnish) until fragrant. Set aside. Grind the ginger, lemon grass and shallot (from Soup Ingredients) together using a mini food processor. Set aside.
2. Bring chicken broth to a boil, add chicken breast and salt, reduce heat setting to low and allow to simmer for about 30 minutes. Remove chicken from broth, shred chicken and set aside. Return chicken bones to the broth. Note: If you like me, have chicken broth made from leftover chicken bones, continue to simmer all the bones in the broth.
3. Heat up 2-3 tbsp cooking oil. When oil is hot enough, saute all the soup ingredients until fragrant. Pour in the chicken broth (together with all the bones) and cook under low heat (simmer, not boiling) for about half an hour till aromatic. Filter off the soup ingredients and get the soup only into serving bowls.
4. Add cooked yellow noodles, blanched bean sprouts and shredded chicken into the bowls. Garnish with chopped spring onions, cilantro and fried shallots.

INGREDIENTS

- 2 cups white sugar
- 1 3/4 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 eggs
- 1 cup milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour two nine inch round pans.
- In a large bowl, stir together the sugar, flour, cocoa, baking powder,
baking soda and salt. Add the eggs, milk, oil and vanilla, mix for 2
minutes on medium speed of mixer. Stir in the boiling water last.
Batter will be thin. Pour evenly into the prepared pans. - Bake 30 to 35 minutes in the preheated oven, until the cake tests done
with a toothpick. Cool in the pans for 10 minutes, then remove to a
wire rack to cool completely.
